Cultivar, which just opened about seven weeks ago in the Ames Hotel, is a classy and innovative restaurant focused on local and sustainable cuisine. Chef Mary Dupont draws inspiration from her culinary experiences to create a new concept – a menu featuring seasonal and regional ingredients with many items grown in an on-site hydroponic garden. Choose from a selection of seafood with raw bar items, vegetable-forward appetizers, pasta, and meat entrees. One popular dish is the popular Squid Ink Messinesi, consisting of manilla clams, squid, Maine lobster, calabrian chili, bronze fennel, and tomato confit.

The restaurant has a unique horticultural theme with tree-branch inspired chandeliers, a Japanese garden suspended from the ceiling, and a 12-seat bar featuring a long slab of live-edge wood. The outdoor patio feels like an urban garden surrounded by lush plants and fire tables. There is also private dining space upstairs that can accommodate 90 seats or 140 people standing.
